Greek Yogurt Pancakes

Good morning!  What better way to greet the day than with the best pancakes you've ever had?
 
How To Make Them:


1 1/2 c. all-purpose flour
1 1/2 t. baking powder
3/4 t. baking soda
1/2 t. salt
1 large egg, slightly beaten
1 1/2 c. Vanilla Greek Yogurt
3/4 c. milk
Vegetable oil cooking spray or butter
Any toppings you put on your pancakes - chocolate chips

Mix all dry ingredients together in large bowl. Whisk egg, yogurt and milk together. Make a well in the center of the dry mixture; pour wet mixture in and stir just until combined. Heat skillet over medium high heat. Spray pan with cooking spray, or, better yet, use butter. For each pancake, scoop 1/2 cup batter onto skillet. If you're adding chocolate chips like I did, sprinkle them on at this point.  Flip the pancakes when bubbles appear on top and cook until golden brown. Serve warm with a pat of butter and warm maple syrup and revel in the adoration your family members shower upon you!
